Scoring is one of my favorite parts about making sourdough! Cutting into the surface of the loaf allows the bread to rise in the hot oven. Trimming and torting your cakes isn't always needed, but it's important to do so if you want level and even slices. To trim the edges, start by chilling your cake and use a bread knife to cut the edges off.
