I tried raw horse (basashi) while on my recent trip to Japan. The texture wasn’t really my thing but it was ordered by our Japanese host and I have a lot of respect for the tradition behind it and the care the restaurant put into serving it. Not everything has to cater to your tastebuds to be worth experiencing. Flavor will always be subjective. But how we engage with food comes with responsibility. Dislike shouldn’t cancel respect.
