I started making sourdough in November of 2023, so looking at all of these crumb reveals from 2024 is basically the story of my sourdough journey. There are amazing loaves and major setbacks all along the way. Each loaf taught me something, and while not every loaf was picture-perfect, all were delicious and enjoyed. He did a pretty good job 😂 here’s what really happened in the video… I mixed 400g water, 650g bread flour, 165 sourdough discard (from the fridge, about 1 day old), and 15g sea salt in a bowl. I mixed it well ensuring no lumps of flour remained and all ingredients were distributed well. I let this sit on the counter, untouched (no stretch and folds or coil folds) for around 7 hours. Typically, the unloaf method is bulk fermented overnight but I started this in the morning. The dough was 77°F. A

I could have handled that better… 🤣 Definitely learned a lot that’ll make my second attempt a lot less chaotic, but honestly, the results are gorgeous! I’m actually so surprised it turned out as good as it did. I’ll share that in the second part (I couldn’t get it all to fit in one video, I’m sorry!)
